Gut Loving Papaya Granola

Ingredients

2 ½ cup oats
1 cup desiccated coconut
1 cup macadamia nuts
¼ cup sesame seeds
¼ cup pepitas
½ tsp ground ginger
1 tsp cinnamon
½ tsp salt
1/3 cup maple syrup
1/3 cup coconut oil, melted
1 tsp vanilla essence
1 ½ cups chopped A Taste of the North papaya

Preheat your oven to 160°C and prepare two baking trays by lining them with baking paper to prevent sticking and make cleanup easier. In a large mixing bowl, combine all the ingredients except for A Taste of the North dried papaya. Ensure everything is well mixed, with each ingredient evenly coated. Divide the mixture between the two trays, spreading it out to create a thin, even layer for consistent baking.

Place the trays in the oven and bake for 15 minutes. Remove them, gently toss the granola with a spatula to promote even toasting, and return them to the oven for another 15 minutes. Keep an eye on the granola during the last few minutes to ensure it turns golden but doesn’t overcook. Meanwhile, prepare the dried papaya by cutting it into small, bite-sized pieces.

Once the granola is toasted and fragrant, remove it from the oven and allow it to cool on the trays for about 15 minutes. Cooling helps the granola develop its crisp texture. When it has cooled, stir in the chopped A Taste of the North papaya, making sure the fruit is evenly distributed. Transfer the finished granola into airtight jars to maintain freshness. Store the jars in a cool, dry place away from direct sunlight or moisture.
